Maxime Dubuet-Boillot
Maxime’s mother grew up in Volnay with her brothers and her sister, eldest of Pierre Boillot's siblings, his grandfather who in turn was already descended from a dynasty of winegrowers established for several decades on the land dear to their heart. It was at the beginning of the1950s that his grandfather began to settle down to take over from his father Victor Boillot, who had recently returned from the war. He did internships with the Boillot family and at the Domaine de Nuits Saint Georges, before taking over the family estate his grandfather Pierre Boillot founded.

Today, Maxime cultivates five hectares of pristine vineyards including plots in numerous prestigious Premiers Crus, while striving to produce precise and harmonious cuvées that reflect his deep respect for the environment and his family traditions. After full cultivation, the plot of “Sur Roches” was one of the first plots worked by his grandfather. As a nod to their history and benefiting from an ideall y exposed soil quality, his first cuvée was born there.
Peaux Rouges, Coteaux Bourguignons
This is a 0.33HA plot of Pinot Noir located just underneath the village of Volnay, Ready to drink on his young age, round and fresh palate with pure fruits aromas.
Volnay, Sur-Roches
A nose that reflects all the character and elegance of Volnay, with notes of dried strawberry, peony, morello cherry and a hint of mocha. On the palate, beautiful concentration, tannic structure, and length with a seemingly endless succession of aromas. Fine ageing potential.
Monthelie 1er cru, Les Riottes
The nose opens up aromas of peony and red fruits. On the palate the structure is straightforward and powerful, elegant tannins, balanced with good harmony.
Volnay 1er cru, Carelle sous la Chapelle
Deep nose on black fruits, raspberry and hints of stone fruits. On tasting, the mouth is full, spherical, with very fine grain tannins. Harmony is surely the adjective that best suits this high-class Volnay 1er cru: the juice melts in the mouth to linger on a long and airy finish.
